How’d you get that display info? I’ve seen a pic of it posted before, but can’t seem locate that option on my FWD SE.
On the right hand side of the steering wheel, there is a button marked VIEW. Press that until you see the display that matches the original posters display (there's only 3 choices). From there, push the ARROW DOWN button on the right side of the steering wheel until you see DRIVING DATA. This will get your dash to look like the original posters dash. You will however lose the tachometer.

That must only be an option on the AWD versions because I don’t have the driving data view available to me. Thanks though.

That’s really strange. It is not an option on mine.
Using the Arrow Down button, on the right side of the steering wheel, you can scroll to SETTINGS. From here, you can add/delete options for the center display. You need to check the box that indicates Driving Data. Using the Carista, I was able to add the selection for Refuel Quantity. It basically tells you how much fuel you need to add to fill it back up.

FYI, calculated value is usually about 2 MPG optimistic from actual. I've squeezed 54 MPG out on the display on twice on 30 mile trips. On my GTIs, which I track consumption regularly, the display typically shows somewhere in the 38MPG range and my actuul is around 36.
