Is there a way to disable the wireless option?

I don't find it useful.

I've tried that with android auto but it will automatically turn bluetooth and wifi back on lol.

Think you have to remove the phone from the infotainment "devices" section and then "forget" the Taos in iPhone's CarPlay and Bluetooth settings.

I don’t know how … and it might be me going crazy… but sometimes my Bluetooth is off and it is still connected! No wifi in either.

Yes. You can. Mine is configured that way. It uses regular Bluetooth functionality wirelessly but Carplay when wired
That said, I don’t remember how i did it.

I think you have to forget the Taos wifi network on your iPhone settings so it can’t connect

You need to turn off vehicle hotspot in order for wired only

Problem Solved: when wireless CarPlay is on --> in CarPlay settings on the iPhone your car should come up --> Slide the CarPlay off.
