0W-20 for normal conditions. You may change the spec of an oil based on certain criteria (extreme heat or cold, load, etc.) but generally you should just use what they say.

Edit: the numbers refer to viscosity when “cold” and “hot” and while the engine will control how hot the oil gets under most conditions, your environment controls how cold it is when the car starts. So you generally only adjust that number if you live in the tropics where it never gets cold, even at night, or Alaska/Canada/Siberia type areas.

Edit: I copied the OP wrong weight. 0W-20 is correct weight.

VW 508 approved 0W-20. That pretty much limits you to the OE oil from the dealer (Which is just branded Mobil 1 ESP X2 which is also available)), Castrol Edge LL IV, and Liqui Moly Top Tec 6200.
